Even having the mind of a human, doesn't the male Gardevoir resist the orders and care of his trainer? Is he not going to try to run away? Either it has enough medals or it will be that the pokeball subconsciously conditions the Pokémon to be docile with its captor. It's one of those things that fascinates me in these kinds of stories of turning into Pokémon and getting caught.

I imagine that the person in question doesn't recall being a human. From a Pokemon's point of view he gets free meals and a roof over his head. Also, while it is not a Pokemon battle, the performance half of the contests requires their best and is rather physical.
All that said, if he does start remembering being a human I imagine things will be dicier between him and his trainer.

In a scenario like the one you describe, he will most likely continue to love his trainer and do what is in his power to protect him. In the pokédex they explain that the Gardevoir can read the thoughts of their masters and love and protect them as guardian angels. Even if he remembered that he was human, his Pokémon instincts would be so strong that he would continue to love him, his loyalty would overcome his desire for freedom and he would do his best to please him and make him happy. Including giving your best and giving everything to be cute, beautiful, to be perfect with the choreography and to radiate happiness during the Contest, as that would make your coach and everyone present happy who the Gardevoirs also seek to make happy because of their telepathy and natural empathy (even if that inside kills him with shame XD)
The downside of all this is that Gardevoirs live for centuries, and when their love dies our Gardevoir would still love him. So much so that it could stay with the remains of him for decades. It's a sad fate for a guy who was once human and is now doomed to love his trainer. Perhaps thanks to his humanity, I may have overcome the loss over the years and from there return to nature, hoping not to be caught again, because he could not bear to see his second trainer die.

Gardevior is not said to read minds in the Pokedex, it can read the future. When it senses its "trusted" trainer is in danger it will go to some far lengths to protect him. This tells me that your normal Gardevoir would be protective of their friends, but not of any trainer. The relationship I see so far seems like they are on friendly terms. He puts up with his trainer's shenanigans because they have built up a positive relationship so far. if he starts to remember he was a human I don't think a lot will change in his he acts, just that he will try and communicate to his trainer "Hey I am a human" and go on from there. I don't buy into him being a slave to some unconditional love or something like that.
