Morty is a rather handsome and somewhat scantily clad minotaur with a tendency to frequently strike sexy poses. I imagine the pumpkin vines were quite taken with him, so this is just their way of expressing their affection.
Monster Prom does have some rather fun and appealing characters, Morty being one who it's definitely fun to see getting tickled.

I'm honestly a bit surprised I haven't seen more tickle pics of Morty, I think this is the first come to think of it. With how bold and outgoing he is among other things not to mention the fact he walks around shirtless (at least in Monster Camp, I haven't played Prom) you would think someone would have gone after him before. Really well done.
