chrismukkah who has submitted these yummy cookies dedicated to

abighaile - Its a recipe from Cooking Light, December 2010...pine nut cookies :3
...And all it has is just THREE tweaks, thats it :P (designated with a *)
Ingredients:
1/3 cup almond paste, grated
3/4 cup sugar
6 tablespoons butter, softened
1/4 teaspoon salt
1 large egg white
1/2 cup pine nuts, divided*
1 capful vanilla*
4.5 ounces flour (about 1 cup)
1 teaspoon baking powder
To make:
1. Preheat oven to 375 degrees
2. Grate almond paste on large holes of a box grater. Combine paste and next 4 ingredients (plus vanilla) in a large bowl; beat with a mixer until light and fluffy (did it by hand myself- my mixer goes way too fast and it would be way too messy XD)- about 5 minutes...by hand, a bit longer, but worth it.
3. Place 1 /4 cup pine nuts in a mini food processor; pulse until finely ground. (Didn't do this either- hence this would be the second tweak- rather, I just had a ziploc bag, threw the whole half cup in there, and crushed them to get that consistency)
Weigh or lightly spoon flour (no, not gonna happen, just throw the 1 cup in the bowl and get it over with :P) Combine nuts, flour and baking powder and stir with a whisk. Add flour mixture to butter mixture and beat on low speed until combined.
4.) Stack two baking sheets- one on top of the other, and line the top sheet with parchment paper. (Didnt do this, I just cooked them as is, with a bit of non stick spray on the pan- third tweak) Shape dough into 48 equal-sized balls (about 1 tablespoon each). Press 3 to 5 of the remaining whole pine nuts (I just used the ones I got from the container myself) into a sunburst shape, then place the cookies on the sheet at least two inches apart from one another.
Bake for 14 minutes (with my oven, it took a bit longer- they took about 20 to 25 minutes to get them good and brown) then cool them completely on a wire rack. Repeat procedure 4 times (all I had for the dough was for 2 trips actually) Yields 24 servings (or 2 cookies)
Think I would have had better luck if I had doubled the ingredients to make more of these guys...
Ah well, thats the way the cookie crumbles I guess :P
