Well they're all male, right?
So I imagine that when in heat, when they mate (as big burly goron men are want to do) they combine their genetics with one of the rocks on their shell. It slowly grows over time until eventually it detaches, a new baby goron born. And the dad that carried him just needs to heal up before they're ready to go again.

Both are good!
I just like toying with the idea of 'alien physiology' - since they're not human but humanoid, but distinctly male (at least one first sight), that way they could reproduce. But having a part of the population be intersex works too.
Part of my own weirdness - all those races that appear 'always male/female'? Figuring out how they continue on. Sometimes I use the human analogy.
Sometimes we have back children.

I don't think whatever take you have is incorrect! We never get a lesson in Goron physiology, so you can basically make up whatever you want! :3 That's the beauty of transformative fanworks, and I love the idea of them reproducing via magic or some other asexual way too, they're all neat theories imo.
