I made THE BEST cauliflower crust pizzas ever! The crusts were solid, could pick them up, and entirely tasty, also low carb, so healthy!
for the crust:
one HUGE cauliflower [at least 2 lbs]
6 eggs to one pound [or equal parts riced cauliflower] shredded mozz
2 tbsp Italian seasoning
for One pizza:
1 small bell pepper thin sliced
2oz onion thin sliced.
2 Italian sausages cooked, then sliced thin
1 cup marinara sauce
12oz shredded mozz cheese
I start with the cauliflower, take a cheese grater to a HUGE head of cauliflower, stems and all.
then blanch the cauliflower. use a sieve to strain it out, rinsing in cold water to stop cooking, and to make it safe to handle. then wring in cheese cloth, or one of those thin kitchen towels. get it as dry as you can.
in a bowl, fluff up the cauliflower, and add equal parts shredded mozzarella cheese. and one large egg per cup of "dough"
spread and SMUSH the batter into a perforated baking sheet or drying rack, with a parchment paper on top of that, press to about half an inch thick, and bake at 400 until the top is showing some color, flip using a cookie sheet to catch the still fragile piecrust, and bake till the new top is nicely browned. add toppings and bake at 450 until the toppings are done!
