Decided to still go with the "train of thought" approach to writing since it's both a unique writing style, and it hides the fact that I'm not actually that good at writing stories.
Also, "" indicates that Phillip (narrator) is speaking, and «» indicates that Gabriel is speaking.

The reason Phillip talks about Gabriel more than himself is because it's much easier to be perceptive of other people's quirks or fascinations compared to your own.
