One of my personal favorite recipes. A tenderly pan seared check breast (with wingtip), dredged threw seasoned flower then seared in clarified butter. Served on a rusk (large cruton) with a piece of seared ham on top of that is a wonderful mushroom sauce then goes the chicken followed by a Tarragon Bearnaise
