Cinnamon Apples in Raspberry Syrup with Custard
I had 5 small apples that were getting a bit old and floury in texture this is what I did with them.
Clean and core apples, sit upright in microwave save container
Spritz with lemon juice on the inside of the cored apple
Optionally add a little lemon zest if desired
Inside the cored apple - pack in as much frozen raspberries as you can and scatter a few around
Sprinkle with cinnamon as much or as little as you like
Add two teaspoons of sugar over each apple
Now I have a 1200 watt microwave so cooking times may vary
Cooked for 5 minutes on power 5 (which is about 600watts)
Turn each apple over and repack with any raspberries that have escaped and spoon some of the syrup (careful its hot so use a spoon)
Cook a further 5 minutes on power 5
Check that the apples are soft if not further time in the microwave may be needed
I cooked mine for a further 2 minutes on power 5
Carefully serve, pour over the syrup and add your choice of topping be it custard, ice cream, whipped cream and or any chocolate that you may have if desired
