A sorceress is a "natural," their spells just come to them, spellcraft is innate and doesn't come from study. Their spells also tend to have a pretty significant theme, in Betsy's case elementalism. Bets has also added a good deal of traditional "learned" wizarding in order to broaden and fine tune her spells.
Witches are more animist, favoring evocation of spirits, gods and entities. Often they have a good deal of potion making/herbalism in their portfolio as well.
