Today’s dinner is a real treat, since it’s Pancake Tuesday I made myself a stack of 3 with a topping of fresh yogurt and fresh berries too for a real dinner treat that makes your mouth go wild like the girls at Mardi Gras!

I measured 1+1/4 cup Pearl River pancake mix with 1 cup milk and 1 egg, then whisked to combine along with 1tbsp cinnamon and 1 finely diced apple then cooked until golden brown and fluffy enough for a stack of 3 with my favourite topping on top. Is that “recipe” enough for you?
