This can and does apply to Cartoon Network as well. Just replace, "Making me work over time," with "You sabotaged our careers!"

Elmyra wasn't really "cancelled." She was just a very unpopular character. She's kind of a major reason that the crossover with Pinky & The Brain tanked. Sometimes certain franchises will write a character out and/or even use them as a punching bag. Happened with Scooby-Doo (as we all know), South Park, Totally Spies, the list goes on. Not a fan of it myself, but hey, not much that can be done.
And kind of in Jellystone's defense, there's barely any (non-human) female characters in Hanna Barbara, and I imagine that if they did make new characters, people probably would still complain. Plus there is a possibility that the people working on the show legitimately wanted some more representation and it wasn't for political reasons. Not every change is politically motivated. Plus the target audience is more younger people than much older folks. I think they were even gonna change Jabberjaw's gender when they were originally gonna appear in Scoob.
As for Pepe...he was definitely a favorite of mine growing up, but looking back, I can't say I was surprised what happened. Would've preferred they just rewritten him to something less controversial, but c'est la vie.

I imagine either way, people would still find a reason to complain. Like how they don't like how they shoehorned such-and-such into a franchise with characters that have legacy, that they aren't good in general, or whatever. Probably figured using existing characters was a safer route.
Honestly, I can't say I was bothered by it. I've been watching those cartoons since I was a baby, and I mostly just shrugged off the changes made to them. I'm not the target audience anymore, and a lot has changed ever since their creation. Plus there are some that legitimately enjoy the newer takes. I've seen fan art of them, even on FA. Plus there's plenty of ways to watch the originals if I really need too.

Frankly I HATE this obsession that Warner has for Scooby-Doo, like, Hannah Barbera has dozens of franchises and hundreds of characters, they only care about Scooby, Shaggy, Velma and others every year. I'm tired of seeing so much Scooby-Doo movies being made (now there's about 2 or 3 per year), it's already saturated too much. Not to mention their call to canonicalize internet memes to try and maintain relevance, Shaggy Ultra Instinct and Big Chungus were two dumb memes that needed to be forgotten.
Besides, CN lost my respect when I was still in my teens when they made Ben 10 a cash cow franchise in my country (and later Adventure Time too) and were one of the culprits for the decline of anime here in the early 2010s.

Well, I remember that KND had 3 campaigns for Bob's TriKids meals. One with custom drinking cups, other with figures of Sector V, and another with cases containing stuff like tattoos and stickers.
Besides SpongeBob, I don't recall anything from Nickelodeon having that much exposure. But maybe it's just me.
