As I mentioned in her bio, Tofu is 467 years old despite looking like she's in her 20s. So obviously she's gone through various phases throughout her incredibly long life. Here's how she progressed through the ages, based on how many tails she had at the time.
1: Due to her weak spiritual energy at the time, it's a wonder that Tofu was even able to manifest. She was really scrawny and sickly at the time and reliant on her adoptive mother, Natto, to care for her when needed. She couldn't work due to her condition, so mostly just stayed at home or accompanied Natto on shopping trips.
2: One of the ways Kitsune can recover from weak spiritual energy is by building up body mass to compensate and buffer their own inherent spiritual energy with that from the food they eat, so later in her first century Tofu put on a bit of weight. And it shows in her figure going into her second century. During her second century, Tofu helped with the shrine dedicated to Natto, and was held in high honor due to being Natto's adopted daughter by the shrine's mako (shrine maiden).
3: At one point during her third century, a ceremonial onna-zumo event was held at Natto's shrine. Tofu was present for the ceremony and decided she wanted to give sumo a try. Natto instructed throughout her training, and Tofu grew into a powerful, skilled and quite hefty sumotori. She had a lot of success over the fifty-some years she competed before retiring to give younger generations a chance.
4: Leading into the Victorian era, Tofu had slimmed down from her Sumo days but retained a significant degree of muscle, which she made use of with her work on steam-powered devices and machinery. She studied in the UK under Daniel Gooch, designer of the original GWR Iron Duke Class, and was also part of the team that brought the Iron Duke to Japan for demonstrations, after which she stayed in Japan to help with design improvements for the Type 150 steam locomotive that was originally designed and built in the UK. She was also known for her somewhat avant-garde take on fashion.
