* With an Ice Cream Core
Sometimes the most brilliant ideas are the simplest ones, and this is a great example from

Don’t know why this idea popped into my head, but I’m glad I went through with it. Cantaloupes (or rather any melons) make for perfect bowls, so why not load up half a one with fresh berries over top a nice, solid ball of ice cream and some yogurt? Cut a flat section on the cantaloupe to get a fancy standing bowl at an angle for extra fancy points. Best enjoyed with a friend or that special someone in your life. 😘
Ingredients:
1 Cantaloupe, halved with seeds removed
1 scoop frozen ice cream, any flavour (I used a leftover Haagen Daaz chocolate chunk one)
1-2 cups mixed berries
2-4 dollops yogurt, any flavour (I used french vanilla)
Recipe:
1) Cut cantaloupe in half with a sharp knife and scoop out seeds with a spoon. Pick out any leftover seeds, but leave the juice in the halves.
2) Scoop out a round, generous-sized scoop of ice cream into each cantaloupe half. The colder the ice cream, the better. You want it to be solid, but not frozen solid.
3) Place cantaloupe in bowls and fill the halves with berries until overflowing. Add a few dollops of your favourite yogurt or whatever flavour goes with the ice cream.
Experiment with different flavours and toppings. Frozen yogurt works in lieu of ice cream, but it never gets as solid as frozen cow juice. Although I guess it’s also... frozen, cow juice.... but try drizzling some honey on top of that with french vanilla yogurt and pecans on top with a maple walnut core. Or do a full-on tropical theme with a Dole whip core, mango, pineapple, peach, whipped cream and shaved coconut. The possibilities are pretty damn endless, thanks to the versatile flavour of the humble cantaloupe.
