I've been wanting to play with white backgrounds for awhile, just don't have the space to offset the subject from the background...so haven't had much practice. *^^*

White backgrounds don't really need an offset, they just need to be blown out. Black ones are harder, the offset helps control light spilling on the background, keeping it dark. You should be able to do white almost pressed to the wall! :)
