
Cinco de mayo personal chicken nachos & adobo guac
Since it’s a Mexican holiday I figured now would be the time to make a personal tray of delicious chips topped with cheese and spicy veggies with a side of equally spicy guacamole to go with it.
Here’s my recipe:
1-lay out nacho chips onto a personal-sized no-stick baking tray
2-top nachos with favourite cheeses, proteins and vegetables (I chose chicken, chipotle peppers, jalapeños, tomatoes and cheddar cheese)
3-broil on high in oven until cheese is melted and stringy (careful not to burn your chips!)
4-as for the guac, mix up 1 avocado with adobo sauce and lemon juice with choice spices and mix well
5-enjoy!
