
Sliced up nice n presented like this for the Bistro I worked at :>
Cajun Seasoning
1 tablespoon crushed red peppers (optional)
3 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons Italian seasoning
2 tablespoons Salt (optional)
1 tablespoon cayenne pepper
1 tablespoon dried thyme
1 tablespoon onion powder
Pork Loin Preparation
Rub pork loin vigorously with the Cajun seasoning
Sear all sides of the pork loin then put into a metal pan, (I steamed my pork loin by covering the pan tightly in cling wrap and steamed for about 1-1.5 hours)
I know not everyone has a steamer (most people don't) but you could also cover the pan tightly with tinfoil and bake for about 1-2 hours @ 350 F (or until it reaches an internal temperature of 155) let it rest for about 15 minuets and slice
