Random memory. Little place near my home called 'Thai Express', where they have a handy 1-10 spiciness scale for the base dish, and you can ask for it to be brought upwards.. That's the official side. The unofficial is that (A) if 'Mama' is in back, the owner of the place, spicy level is +2 across the board, period, and (B) if you've been there at least once before, you're allowed to ask for higher amounts. Friend of mine goes with a 26 and I'm sitting here mumbling, 'I can feel my eyes itch a table away, daaamn.' ^_^ Thankfully, the place follows the rule, 'Spiciness for -flavor- first and foremost, not heat. Heat is the happy side effect'.
