Grilled Pulled Pork & Cheese Sandwich
Vrghr was at a friend's house, and we were clearing out the freezer of leftover goodies from prior meals. One item was a small picnic pork roast, still in the original shipping plastic wrap. Wuff decided it would go well as "Instant Pot Pulled Pork" from Vrghr's prior recipe (found here: https://www.furaffinity.net/view/17967568/ )
Once the pork was done, there was a discussion on what could be made from it. Not having the 'slaw or burger buns from the original pulled pork sandwiches, wuff thought a take on grilled cheese might be tasty.
It certainly was! And so simple to create! These are definitely great noms!
Give 'em a try if you want a new variation on the traditional grilled cheese, with a lot more meat and 'que involved!
(Quite filling, too!)
INGREDIENTS
Pulled Pork ( Try out Vrghr's Instant Pot recipe here: https://www.furaffinity.net/view/17967568/ )
2 slices good, sturdy bread per sandwich (Wuff used a multi-grain "harvest" loaf w/seeds)
2 slices good cheese per sandwich (Wuff used a sharp cheddar & American)
Butter (quite a bit)
DIRECTIONS:
Put a skillet over medium-high heat. Add a nice pat of butter to start melting (You want the skillet hot enough to toast the bread, but cool enough to melt the cheese inside without burning the bread first)
(Note, putting the cheese slices against the bread with the pork between helps keep the bread from getting too soggy from the pork juices)
Cover one slice of bread with a slice of cheese. You might have to break the cheese to get it to fit over most of the bread and not hang over the edges, depending on bread and cheese size.
Add a goodly portion of pulled pork over the cheese slice. Vrghr used between 1/3 & 1/2 C of pork
Lay the other cheese slice across the other piece of bread and place it cheese-side down over the pork
Liberally butter the top slice of bread
Lay the sandwich onto the molten butter in the skillet, un-buttered side down. Cover the skillet to hold the heat in and help melt the cheese inside. Grill until that side of the bread is toasty and golden (1-3 minutes depending on skillet heat)
Carefully flip the sandwich onto the untoasted buttered side and continue grilling, covered, until that side is toasty and golden too
Plate and serve

Vrghr is sure the stuff in your freezer would work great!
And that sounds like an interesting and tasty combo for their sandwich! YUM! The kimchi would be a nice, spicy take on the southern version with coleslaw that wuff made for his shop friends way back when.
