Base
1 package of dry butter pecan cake mix
1/3 cup butter, softened
1 egg
Heat oven to 350 degrees and grease a 9x13 pan, I used Crisco. Save 2/3 cup of the butter pecan cake mix for the filling. In a large bowl, combine the rest of the cake mix, butter and egg in a bowl at a low speed with a hand mixer until well combined. Press in the bottom of that 9x13 pan. Bake 15 to 20 minutes, or until light golden brown. On mine, it took 16 minutes for it to get light brown.
Filling
1/2 cup packed brown sugar
1 1/2 cups (yes that much) dark corn syrup
1 teaspoon vanilla
3 eggs
1 cup of chopped pecans
In large bowl, combine the reserved dry cake mix, brown sugar, corn syrup, vanilla and 3 eggs at low speed until moistened. Beat until combined Pour filling mixture over warm base; sprinkle with pecans. Bake an additional 30 to 35 minutes or until filling is set. Mine took 32 minutes. Cool completely in the fridge and then cut into bars.
This is from a pillsbury bake off cookbook from 1995. Tried it out today and they’re wonderful!
