
So, the Rev (my wife) has been pining for Cornflake Bars, something she remembers from her elementary school days. So, I did some research and surprised her, yesterday.
There are no two recipes that seem exactly the same for these, but she gave two thumbs-up. So didn't the squirrels. This is an average of several recipes on the net:
1 cup light corn syrup
1 cup sugar
1 and 1/2 cups peanut butter
6 cups corn flakes.
Optional 1/2 to 3/4 cups semi-sweet chocolate chips
Grease a 9inx13in pan with either butter or cooking spray and grease the back of a metal spatula.
Combine the first three ingredients in a medium sauce pot and heat on medium to medium high heat stirring until the corn syrup, sugar, and peanut butter combine into a smooth texture mixture. Pour into larger bowl with cornflakes and combined until all cereal is coated. Pour into greased pan and press down gently with the spatula. Cool at least one hour before cutting into squares.
Optional: melt the chocolate chips and spread over the top of the bars before cooling.
I found that cooling it in the fridge works best.
Some of the other variations state to combine just the sugar and corn syrup. Heat on medium heat until it just starts boiling. Stir in the peanut butter and then combine with the cornflakes. Otherwise it's the same. Some variations called for more cornflakes, others for less. Experiment and decide what works best for you.

They are tasty. Not something I had growing up. Our house was a rice crispies bar house. The Rev grew up in Louisiana. I suspect these were first invented by some elementary school kitchen staff looking at the government surplus case of plain corn flakes that just arrived and wondering how they would get the kids to eat them. Then they looked at the surplus packages of peanut butter and corn syrup and a light bulb lit in their heads...
