I made this in response to the Let's Keep It 'Short' challenge, and it's only 5 ingredients. Serves 1, maybe 2 if you're generous.
I based it on a Brazilian-style marinated grilled pineapple recipe

2 slices canned pineapple, cut up, with the juices from the can
2 tbsps Casamigos Reposada tequila
1 tbsp light brown sugar
1/4 tsp ground cinnamom
1/8 tsp curry powder
Put it all in a saucepan on medium until boiling and sugar is dissolved, then simmer until the liquid becomes a glaze.
Verdict: Pretty damned good. The fruit still has some texture, and you can tell the cinnamon. Tiny whisper of heat from the curry. It will be amazing on vanilla ice cream.

got an easy one for you, I used it with dinner last night. one large red onion and one large yellow onion. cut in half and chop thin (or dice). toss in large pan with 2tbs of butter on med-high heat and a heavy pinch of salt. toss until golden brown and taking some good color.
now for a choice, Riesling or sweet Marsala wine? if you won't drink it, do not use it for cooking. (I cheated and used 100mils of each)
simmer down until the wine will coat the back of a spoon.
they were AWESOME next to my smoked brisket, and they go good on steak as well.

my experience is that sweet marsala works better than dry, but let your tastes be your guide in this. I've made these both ways, sweet and dry. and my brother suggested getting one onion of each kind, yellow, red, white, and bunch of green onions, and making them up like this as the ultimate onion side dish!

Vrghr LOVES some good caramelized onions! So buttery, thick and sweet! Hard to believe they come from the same potent "tears triggers" orbs!
Wuff hadn't tried making them with the sweet Marsala or Riesling. Bet that does great things for the flavor! Will have to give it a shot!

Don't Judge? Pffft, that's what microwaves are FOR! Really, folks are supposed to crank up the stove and dirty a pot and spoon (to stir), just to get a little heat into something already prepared? Yet there are still those who are on the whole "microwaves evil" kick, and shun them.
