Cheese and Onion Hogbake (serves 4)
1 and a half large onions, chopped
3 cups grated cheddar cheese, plus extra for sprinkling
4 beaten eggs
3/4 cup milk
Salt
Pepper
2 cups cornflakes, measured after being crushed
Enough slices of tomatoes to cover the casserole dish
1. Preheat oven to 350F.
2. Place the chopped onions at the bottom of a large casserole dish. Pour the cheese over the onions, and then pour the eggs and milk over the top of everything. Finally, season everything with salt and pepper.
3. Sprinkle the crushed cornflakes on the casserole and cover everything with tomatoes. Then sprinkle cheese on top.
4. Bake for 40 minutes and serve hot.
