Got a big chunk of corned beef on sale so I cooked that today.

I used Guinness as the beer and instead of water used chicken broth. My roomie doesn't like cooked carrots so I left those out and I forgot to get an onion.
Thoughts: I love cooking corned beef like this, it adds an extra layer of flavor that I just love. Our crockpot's timer was broken but I basically tried to max it out and have the roomie turn it off when the time was right, which thankfully worked. Yum yum salty meaty cabbage and potatoes.
