Yeah, that's how it is in RPGs...you never end up needing most of the crap anyway, especially consumables.
It gets even worse if you're playing with a full LOTD loadout in Skyrim - Auryen has to be some kind of Daedra...no mortal could possibly know to create spaces for the EXACT amount of unique things that happen to be currently accessible by the Dragonborn.
