While a knight would indeed got rich quick, the overall amount of money in the system would most likely not be changed as drastically as to crash as a whole (though there could be a local crash). And hiring a full army would not be profitable, since each soldier would get probably just a couple of coins (even if those slain would be excluded). It's just not worth it, waging a war against a dragon. If dragons were a kingdom, then maybe, but on a solitary one? Nope, I don't think so. I still say it's more stable than paper money which can literally change value by whole orders of magnitude overnight.
Granted, I'm not an economist, but seeing money worth being gradually less and less, or artificially kept at a stable level when it could be growing has me doubtful.

let say you take an army of 10 000 knights/mage/whatever trained man,... let's double that 20 000 men !
that may not be the entire army of a country, but that's a huge task force
Now imagine you gave 10kg of gold to each one, that's a fortune for each one of them (except maybe few legendary heroes/mercenary I guess )
In grand total that would be 200 tons of gold
Now look at his lair .... there is far more than 200 tons of gold
And now you had to consider one thing : all this gold is stolen (plus maybe some agreements ), andhad wrecked havoc to obtain it, this guy is a walking natural disaster, if he's gone all of this will stop, so sending ana rmy is not just a quick cash grab but an investment.
