hey so I write things sometimes and might post some here eventually but I also cook and I'm gonna post some recipes I guess
This is for some pretty great brownies, the picture is kind of terrible so sorry about that but trust me they're delicious, just ask
gerrark or
grandpandaman they will vouch for my baking abilities
Okay, so you will need some things for this here's a couple of lists
Brownies
1 and 1/3rd cups flour
1 cup sugar
3/4 cup malted milk powder
1 teaspoon baking powder
1 and 1/2 cups semi-sweet chocolate chips
1/2 cup butter or margarine
3 large eggs, separated
2 teaspoons vanilla extract
Chocolate glaze
1 cup semi-sweet chocolate chips
1/3 cup whipping cream
2 teaspoons vanilla extract
All right so start by mixing the flour, half the sugar, the malted milk powder and the baking powder together in a bowl and set that aside.
In a pan over low heat, stir half a cup of the chocolate chips and the butter till melted. Take it off the heat and add the flour mixture, egg yolks and vanilla, beating to blend. Stir in the remaining cup of chocolate chips.
Now at this point I should mention that if you're used to making brownies from a box mix the batter is going to seem really dry at this point so don't worry too much about that. Anyway, take your egg whites and start whipping them in a deep bowl till they get all foamy. An electric mixer really helps here, but it's possible to do it by hand as well. Beat in the remaining half-cup of sugar a tablespoon at a time until the whites hold stiff peaks. Stir a third of the whites into the batter, then gently fold in the remainder. It should become a little easier to work with now!
At this point you're going to want to prepare the pan for the brownies, I have a 9x9 one but 7x11 probably also works. Oil it and maybe dust it with a bit of flour. Get the batter into the pan and use a wooden spoon or something to smooth out the top as best you can. Bake it for around 45 minutes at 325 degrees. Again this is not 350, it's 325.
When you've got maybe ten minutes or so to go on the brownies, you'll want to make the glaze. Just put all the ingredients in a small saucepan over low heat and keep stirring till it's all melted and smooth.
Pull the brownies out when they're done and put them on a rack to cool if you have one, then spread the glaze on top.
If you want it to look like the photo give it a while to cool, if you don't mind the brownie crumbling all to pieces you can have it warm though. It's really nice either way!
