First of get a hold of these items
1 tbsp Olive Oil
1 Med Onion
2 Garlic Cloves
1Lb Beef
1 Bunch of Cilantro
16oz of red enchilada sauce
a package of flour or corn tortillas
12oz of shredded monterey jack cheese
2 avocados
Directions:
Heat that oven up to 350 degrees. Then heat up your olive oil in a large skillet over medium heat. Saute the Garlic and Onion so its nice and fragrant, takes about a minute. Add your beef and give it a stir to mix that onion and garlic well. Season with salt and pepper, and give that beef a nice browning. Once brown add half your cilantro and half your enchilada sauce. Combine it through stirring. Reduce heat to low and let the mixture simmer.
Meanwhile, thinly spread some leftover enchilada sauce in a casserole dish. Layer tortillas on top of the sauce, and don't worry about overlapping them if you must. Take that simmering beef mixture and spread it evenly over the tortillas, and then half your cheese on top of that. Put down another layer of tortillas, top it with the rest of your enchilada sauce and shredded cheese. Cover the dish with a foil and bake 15 minutes. Remove the foil and bake another 5 minutes. Let it stand 10 minutes. Slice up a avocado while it cools. Serve with remaining cilantro and sliced avocado.
I really recommend eating each bite with a piece of that avocado. The flavors really compliment each other!
