This chicken is very sweet, perfect if you're a sweet fan (thankfully my boyfriend is!). It ends up tasting a lot like that teriyaki chicken they have at Asian places in the mall food court, only better!
I served this with steamed white rice and a bag of frozen vegetables (lazy, I know).
Ingredients
8 chicken thigh fillets, chopped in half
1 tbsp vegetable oil
1 red onion, sliced
3 garlic cloves, sliced
Black pepper
1/4 cup soy sauce
1/2 cup brown sugar
1/4 cup fish sauce
Instructions
1. Place the chicken and oil in a bowl and toss to combine. Heat a large frying pan over a high heat until hot.
2. Add the chicken, in two batches, and cook for 2 minutes on one side until lightly brown, turn and cook for another minute. Remove from the pan.
3. Reduce the heat to medium and add a little extra oil if needed. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
4. Return the chicken to the pan, sprinkle liberally with black pepper, add the soy sauce and stir to combine.
5. Cover the pan, reduce heat to low and cook for 10 minutes, stirring occasionally.
6. Increase the heat to high, add the sugar and stir to combine.
7. Cook uncovered for 3-4 minutes, or until the sauce is rich, dark and syrupy.
8. Add the fish sauce and stir to combine.
9. Place in a serving dish and serve with steamed rice and green vegetables.

FINALLY got an evening with time to cook and decided to try this recipe.
Don't be fooled by the simple ingredients, it's actually fairly complex. Such as you need to be careful the garlic doesn't over-brown and the sugar doesn't burn while you thicken the sauce!
However, it was SO worth it! My own was served with jasmine rice and a side of broccoli, cauliflower, and carrots. The sauce was he star, so thick and sweet and sticky with a tiny bit of funk from the fish sauce that made it just right. It was equally delicious on the chicken, the rice, and the vegetables! I was afraid the chicken might be bland since it wasn't seasoned before browning, but that was NOT the case at all. It soaked in the delicious taste of the soy and garlic and even a little sweetness from the onions as they caramelized! Then adding the black pepper gave it a subtle kick.
Absolutely delicious and definitely being added to the family recipe book! :)
