Thuntomite stew from Worlds Adrift, made from oranges, jackfruit, sesame oil, onions, garlic, muscovado, soy sauce, rice vinegar, sambal oelek, cranberries, and brown rice.
1 medium orange
1.5 teaspoons sesame oil
10 ounces jackfruit
1.25 teaspoon salt
.5 chopped onion
5 minced garlic cloves
1 cup vegetable broth
1 tablespoon muscovado
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sambal oelek
1 cup cranberries
2 cups brown rice
2 tablespoons chopped green onions
1. Mix the brown rice with 4 cups of water and 1 teaspoon salt. Put in a pot, cover and simmer for 50 minutes.
2. While step one is progressing, peel the orange. Section the orange over a bowl, and then squeeze the sections to get the juice. Set both the juice and the sections aside for later.
3. Add sesame oil to another pan and put the pot over medium-high heat. Add the chopped onion to the pan, stirring until it turns translucent. Then add the garlic and stir continuously for a minute.
4. Add jackfruit, salt, orange slices, orange juice, broth, muscovado, soy sauce, rice vinegar, and sambal oelek to the pan. Cover and simmer for half an hour.
5. Add the cranberries, then shut off the heat. Place a scoop of rice in each of four bowls after step one is finished and top each one with 3/4 cup of the stew from step four. Sprinkle the bowls with 1.5 teaspoons green onions and enjoy.
