So it was my birthday last week and for me half the fun of a birthday cake is making it
I stumbled on this cake in one of my books and it looked good so I opted for this. the original recipie was Pecan and Banana but my boy doesn't like pecans so I subbed in Pistachios
The cake is a nice dense almost pound cake and the pistachios are really flavorful.
If I would do anything differntly I would have mixed half the banana mixture into the cake itself and add a little heavy cream into the rest of the banana mas and blend it up more
But this is the original recipie

Banana Pistachio layer cake
1 1/2 cups ap flour
1 tbsp baking powder
3/4 cup unsalted butter softened
3/4 cup superfine sugar
3 eggs
1 tsp vanilla extract
1/3 cups chopped Pistachios (In the future I would add more)
1/4 cup Dulce de leche
Filling and Topping
2 Bananas
5 tbsp dulce de leche
1/2 cup whipping cream
pistachios to decorate
1. sift flour and baking powder in large bowl and add butter, sugar, eggs, and vanilla. Beat well until misture is smooth, then stir in chopped nuts. Add Dulche de leche and swirl through the mix.
2. in two 8 inch lined or greased cake rounds spoon the mixture evenly and smooth with a spatula. Bake in Preheated 350 degree oven for 25 to 30 minutes or until risen firm and golden brown. let cool in pans for 3 minute before turning out onto a wire rack to finish cooling.
3. Reserved a few slives of banana for the deforation and mash the rest with a fork or food processor, mix in 3 table spoons of Dulce de leche and use to sandwich the two cakes.
4. Whip the cream until thick, and swirl in the remaining 2 tables spoons of Dulce de leche, spread evenly over cake and top with banana slices and pistachios
