Got a catalogue thing from my local grocery store that had a tasty looking recipe in it so I tried it out.

Serves: 4
Ingredients
4 slices BACON
1 yellow onion, diced
2 red peppers, diced
3 ribs celery, diced
2 tsp. kosher salt
1⁄2 tsp. black pepper
Pinch cayenne pepper
1 1⁄2 pounds red or yukon gold potatoes, cut into bite-sized chunks
2 cups chicken broth
4 ears corn
1 1⁄2 cups whole milk, half-and-half, heavy cream or a combination
2 tsp. sugar (optional)
1 bunch scallions, sliced
Step 1
Cook BACON in large stockpot or dutch oven set over medium-high heat until crisp (safe internal temp. 145°F). Remove to paper towel-lined plate and set aside.
Step 2
Add onion to pot with BACON fat and sauté until tender, about 3 minutes. Add red peppers, celery, salt, pepper and cayenne; sauté until vegetables are tender, about 3 minutes.
Step 3
Add potatoes and chicken broth; raise heat to high. Bring soup to a boil and cook until potatoes are tender, about 10 minutes. Simmer, lowering heat if necessary.
Step 4
While potatoes are cooking, cut kernels off ears of corn; set aside 1 cup corn kernels. Place remaining kernels and milk in blender and puree until smooth.
Step 5
Once potatoes are tender, add corn puree, remaining corn kernels and sugar, if using, to soup. Simmer until corn kernels are tender and corn puree is heated through, 3–5 minutes. (Do not allow soup to boil after milk is added or it may curdle.)
Step 6
Serve soup garnished with crumbled BACON and sliced scallions. Refrigerate any leftovers.
Thoughts: First off, I doubled all the ingredients so we'd have leftovers. Second, not enough BACON! I used the whole pack of BACON, but it didn't make much for the soup; I want every other bite to have BACON. Really delicious soup though. Used frozen corn because I didn't want to bother with corn cobs, I've had a long week and I'd rather not make anything more difficult than it needs to be. I think this is the first time I've made a chowder, and I love how it came out. Yum yum. Potatoes, BACON, and corn, what more can you ask for?
