I'm pretty sure it would be hard to build the town in a way that the buildings won't collapse due to the movement of the Strider, but who cares. Fantasy doesn't have to me scientifically accurate ;)
Though this aspect could lead to more intersting world building details in the story.

Exactly. Who knows, maybe there's something magical about that town. It would surely help with a lot of things. Like attaching it to the strider's back, keeping the buildings safe, maybe even helping with water supply for all the plants. At least I don't think someone would dig a well into a giant reptiles' back. That sounds painful to me. ^^
