
The Palazzo VIP Lounge: WTF ARE THESE PLEASE TELL ME
*NOTE: I DID NOT COOK THESE!*
Years ago we went on a road trip while moving to Oregon, and we stayed at The Pallazo in Vegas for a night with access to the VIP lounge where they served bottomless drinks and had a bunch of snacks and finger foods. And I am OBSESSED with whatever those things are the top right are, but I have no idea wtf they were. I don't even know how to search for what they are because I'm not even sure what the ingredients are. I think there's lobster? And the cream was a savory lemony cream of some kind, and I'm not sure what the leaves were other than MAYBE some kind of lettuce? But they were so delicious and it drives me crazy not knowing what the heck they were! It's a long shot but maybe someone out there knows what these things are?

Not sure those would have any particular name. Likely a custom creation by the chef, like an "amuse bouche" for the guests.
Vrghr's guessing that the red leaves are Radicchio, but they seem even darker than normal. The cream is likely a house-made lemon-flavored aioli or foam, with lobster meat tidbits on top From the darker red tips on the meat, its likely claw meat from the lobster. Looks like some micro greens as garnish in there too.
Can just imagine them tasting spectacularly good!
