I will doodle with whatever's handy. Earlier this year I bought a fountain pen, and I will sometimes sketch with it, too. A lot of the time if I'm actually trying to work out an idea, I will sketch with a ball-point pen. For more finished stuff, I usually use a brush, although I may also use a dip pen or a pencil.
I have met people whom I've only seen working on a tablet, but I've never asked them if they have ever drawn on paper. I do have a couple of old friends who used to draw and paint traditionally, who now work almost exclusively digitally. I guess it's whatever turns you on.
