Turkey Meatballs with loaded mashed potatoes
Tried a new recipe today~
It was good^^
Recipe -
1. Trim and thinly slice 2 green onions. Thoroughly combine 1/4 cup panko, 1/4 tsp garlic salt, white portions of green onions, and 16 oz. ground turkey. Form mixture into 16 equally-sized meatballs
2. Add 2 tsp of olive oil to a large non-stick pan on medium heat. Add meatballs and cover, roll occasionally until browned all over and reaching a minimum internal temperature of 165 degrees (11-13 minutes). Uncover and stir in 4 fl oz. BBQ sauce and 1 tbsp water until coated then remove from burner.
3. While meatballs cook heat the potatoes on a medium-sized non-stick pan over medium heat. Add 20 oz mashed potatoes 1/4 tsp garlic salt, and 2 oz cream cheese to hot pan, stir vigorously until combined and heated, 2-3 minutes, then remove from burner.
4. While potatoes heat, place 10 oz of corn kernels in a microwave safe bowl and microwave uncovered for 3-4 minutes then stir in 3/4 oz of butter until melted
5. Plate dish as pictured, topping meatballs with sauce from the pan and garnishing the potatoes 2 oz of shredded cheese and green portions of onions, then serve
