I just blindly throw shading about. Haha, I'm sure it's probably so wrong and the light wouldn't reflect like that at all.

Usually brown for shading. Usually a light yellow for highlights. If you're using sai set the shaded layer mode to multiply and the highlight layer to luminosity. I put the colors on with the marker tool and blur them with the water tool. Nothing fancy.
