My birthday breakfast ^_^
Ingredients:
2 tablespoons ground flax meal + 6 tablespoons hot water, whisked
3 tablespoons pumpkin puree
¾ teaspoon cinnamon
1/8 teaspoon all spice
1/8 teaspoon ginger
pinch of salt
½ (or less) soy, coconut, or almond milk
Few tablespoon flour
2-4 slices of bread
Directions:
Let flax “eggs” sit for ~5-10min until thick.
Heat a large pan or skillet over medium low heat and lightly oil.
Mix in all other ingredients with “eggs.”
Spread batter on both sides of bread and lay in pan.
Cook about 5min per side, until golden brown.
