Well, this is from "Great Old-Fashioned Recipes" by Beatrice Ojakangas- its funny what you can get from those torrent sites, besides pron of course :P
Ingredients:
1 cup butter, softened (used 2 sticks unsalted)
1 cup granulated sugar
2 eggs
1/2 pint dairy sour cream (1 cup, and I used low-fat)
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
3/4 cup chopped walnuts or pecans (went with pecans, but you can use any kind of nut...if youre nut allergic, I've got just the thing further down)
1 teaspoon ground cinnamon
2 tablespoons brown sugar (only used 1- its got enough sugar in there already XD)
To make:
Preheat oven to 350 degrees F. Generously grease & flour either a 13" x 9" baking pan or a 10 inch Bundt pan.
In a large bowl, beat softened butter and granulated sugar until smooth and light. Add eggs, and blend with sour cream. In a separate medium sized bowl, add flour, baking soda and powder until blended well.
Then slowly stir in the flour to the egg mixture along with the vanilla. Spoon half of the batter into the prepared pan.
In a small bowl, mix nuts, cinnamon and brown sugar together (I had actually pre-crushed these nuts ahead of time in a ziploc bag, along with the sugar and spices). Layer the nuts on the half of the batter, and then, pour the rest of the batter over and then top with the rest of the nut mixture. (Er...mixed it all together myself, sorry :P)
Bake for 45 to 55 minutes or until you stick a wooden toothpick in it and it comes out clean. Cool out on a rack for 5 minutes, take it out of the pan and serve warm...makes 10 to 12 servings.
Variations
Pennsylvania Dutch Struesel Coffeecake:
~ In place of nut mixture, blend together 1 cup packed brown sugar, 1/4 cup all-purpose flour, 2 tablespoons ground cinnamon, 1/4 cup melted butter and 1 cup chopped walnuts or pecans. Use in the same way as the nut mixture, and bake as above.
Blueberry buckle:
~ Omit nut mixture. Turn ENTIRE batter into a greased 13" x 9" baking pan. Sprinkle with 2 cups fresh or unthawed frozen blueberries. Combine 3/4 cup sugar, 1/2 cup all-purpose flour, 1/2 teaspoon ground cinnamon and 1/3 cup softened butter. Sprinkle over blueberries before baking and bake as above.
Pineapple Coffeecake:
~ Omit nut mixture. Turn ENTIRE batter into a greased 13" x 9" baking pan.
Spread top of batter with a mixture of 1/2 cup softened butter, 1/2 cup honey and 1 cup well drained crushed pineapple.
Enjoy folks!
