Ever wonder what to do with a little extra ham you might have leftover from a large ham? Extra’s from Christmas and need a little spice to warm you up in the cold winter? Well this might be just the way to warm you up and make good use of some of that extra ham. It works great for sandwiches, topped on crackers, or just eat it straight up with a spoon too. While this is served chunky style, you can run it through a food processor if you want it to be more smooth and spread able.
The combination of spice and savory and cool elements work great on the palette year round.

Setup:
1 ½ lbs of cooked ham, chilled and diced small
½ cup diced white or red onion
2 Jalapenos, diced (Remove the membranes for less heat.)
½ cup diced celery
1 cup cheddar cheese
½ cup dried cranberries
½ tsp Fresh ground black pepper
2 Tbsp Dijon Mustard
½ cup Mayonnaise
The particular ham I used here I baked and had a nice sweet glaze put on it, which added a light sweet flavor to the dish, along with the dried cranberries.
If you want to add a little more heat, sneak in a ½ tsp red pepper flakes, they’ll really shine after the chill time.

Cooking:
Not much cooking here! Simply combine all ingredients and then using a spatula fold ingredients together with the mayonnaise and mustard. If you want you can add a little salt to taste though the natural saltiness of ham tends provide enough, especially so if you are serving on salted crackers.
Allow this to sit in the refrigerator for at least six hours, though overnight is best. This allows the flavors to mingle and really come together and you’ll get a good bit extra heat from the dish as well.
