It's a general social convention and manner to cover the mouth with a hand while yawning, but this won't work well for dragons, for their jaws are much more widely gapping, and they also have long snouts. As a dragon, the proper way to do this might be by using wings to cover the mouth from others' sight in public.

Never thought that yawning dragon will be a such cute sight
Adorable how he uses wing to cover his maw
And as you described it is quite a logical move - wing is definitely bigger than any piece of fabric to hide such a natural yet a bit impolite act
