This is probably about as simple as it gets for me as far as making something from scratch for dinner anymore. ^^;
Ingredients
Package of Blueberries
1 Tablespoon or two of water
3 Cups Flour
1/2 Cup white sugar
1 1/2 teaspoon salt
1 Tablespoon baking powder
1 1/2 teaspoon baking soda
2 1/4 Cups of whole milk
1/4 Cup vegetable oil
1 Tablespoon vanilla extract
1/4 Cup apple cider vinegar
3 Eggs
Butter
Take a large bowl, put all the dry ingredients in it and half the sugar. Mix to make sure it's combined.
In a measuring cup, mix all the wet ingredients, minus the water, and let sit for about 10 minutes.
Pour the wet ingredients into the dry and combine by folding it together. It will probably be a bit lumpy and that is fine. Let the batter sit for roughly another 10 minutes.
While the batter is sitting, put a pan on medium heat, put the water in, other half of the sugar and blueberries. Cook until it almost looks like a jam. If it looks like it got too think, then just add a little more water.
Have another pan and put it on medium heat. Add some butter to the pan and once the pan is warmed up enough, start adding the batter. Once bubbles come up to the surface and the bottom is getting brown, flip it. If you make stacks like I did, I put butter in between each one. Once you're done with your pancakes, spoon some of the blueberries on top and enjoy.
