I always assumed that most of the evolved animals were young adults already since it wouldn't make sense for Cortex to make them as a bunch of kids. Charles Zembillas has gone on record saying Coco was envisioned as being noticeably younger than Crash but still a teenager, so that gives it a bit of solid ground.
