I wrote an entire thing about Birdo's history and background on my old DA account. To save a lot of time from doing that again I'm gonna reiterate some things in a quick summarization for those unfamiliar with her background. Birdo is originally male. He's one of the original fictional trans characters that didn't like his identity as a male due to already having feminine attributes and decided to call himself "Birdie". Today he's fully a she' decided by Nintendo to avoid the trans confusion. I encourage you guys to look this information up yourselves or watch the Youtube videos explaining her origins. I always go by how something was originally done over seeing butchered overseas versions of a character IF it catches my attention and I like it so anytime you see me draw Birdo he will still be identified as a she yes, but will fully be male still. I won't use the overseas version. With her being trans it opens up things to funny jokes and her making sexual advances to those who know that he's really a guy. Jokes like that have already been made in one of the Mario games which is Mario and Luigi Superstar Saga (VERY fun game).

I have absolutely no idea what species Birdo is supposed to be. She looks like a reptilian with a funny-shaped mouth. Birdo made her first appearance in Super Mario World 2, a classic 90s Mario game that took place presumably in Mario's dreams. She was a repeated boss character that would shoot eggs from her mouth as a defensive measure and you had to jump on them, grab them and hurl them back at her. Nowadays Birdo is one of Mario's friends and Yoshi's love interest so you'll see her in some sports games and she's now playable in Mario Kart 8 Deluxe if you've bought the pass expansion.
