
Desert... Brownies!
But not just any brownies, turtle brownies! In Bite size form!
And, drizzled with Ganache (The Ganache I keep in a squeeze bottle in my fridge, I just warm it a few times in the microwave in sets of fifteen to twenty until it's soft enough to pipe out. Bam, easy chocolate sauce for plating)
I used my mini muffin pan that I have and it was just perfect for one BOX of turtle brownies... yes, it's true, from a box!
Well, I think my mother wants to keep me fat. She gives me lots of box mixes and other things, some of which I need, things like brownies and cakes though? Not a need, but they are nice and comforting.
I did add an additional egg over what the recipe called for, as I like the little bit of extra moisture and richness, and I added a couple tablespoons more of unsweetened cocoa powder.
As for making...
Follow box directions for mixing, though add extra egg and cocoa powder as you like (Though if you add to much powder you'll want to up the water and or another egg, to balance the moisture to dry.)
Once mixed ( It's okay to be lumpy, you don't want to overmix. I use a spatula for my brownie mixing) I used an 8/18 disher to evenly scoop 24 mini brownies into a GREASED mini muffin baking pan.
Each brownie then got a small little "dot" of the caramel sauce included with the brownie.
I then proceeded to put a pecan half on each one right on top of the caramel.
I baked in a 350 degree over for about twenty to twenty-five minutes. Due to there small size, they'll cook MUCH quicker than box directions. They also had a small bit of rise too, but they went straight up so even with fairly full cups I didn't have spillage issues.
Once finished, let cool for a little in the pan, then gently pop out the muffins and let cool on a rack.
Here I used Ganach for decoration, but you could use some simple white icing, or white chocolate, or just eat as is. You'll find they appear to be caramel filled is how they turn out this way.
