I saw a fairly simple recipe in a grocery store coupon book and decided to do my own take on it.
Ingredients:
12-16 Oz Pasta (I used Tri-color rotini)
4oz Lemon Butter w/ Herbs (I used private selection, you can probably make your own pretty easily though)
1 cup shredded mozzarella
1/4 cup Parmesan Cheese
2 tsp Ground Pepper
Zest and juice of 1 Lemon
Directions:
1. Boil pasta in salted water to desired texture, then drain and set aside for a moment
2. In the pot you boiled the pasta, melt lemon butter
3. Add pasta, season with pepper, and stir in mozzarella and lemon juice until cheese melts
4. Either mix in or serve and top with lemon zest and parmesan
Thoughts: I always love me a simple but tasty recipe, and this is very satisfying for someone who loves lemon and cheese. The recipe I originally found was even simpler but I felt would lack flavor so I did my own thing to make it better and I do really enjoy it. The lemon butter was a little on the spendy side, but it's quite tasty so I'm not complaining too much about it. You can have this with all sorts of pastas, originally this was a spaghetti recipe but I wanted to cook the rotini we had.
