
This came out quite well from my family!
Advisory: Yes, I know eating baby cows is controversial. You can always swap out with chicken or eggplant instead.
6-8 veal cutlets, pounded flat in wax/parchment paper
2 cups Italian flavored breadcrumbs
2 eggs
3/4ths cup flour
2 cups jarred tomato sauce
1 cup shredded mozzarella
1 tablespoon fresh chopped parsley
salt and pepper to taste
2 heaping tablespoons olive oil, divided
You want to have a "mise en place" because its pounding the meat first (so that it isn't tough and chewy), then have three separate bowls: one with the eggs cracked open and mixed well, then flour, then breading. It is also how you need to coat the veal in that order.
Get a large saucepan and use the 1 tablespoon of olive oil to fry the veal, but DON'T overcook it! You just want a light browning and then you can dredge / dry off the oils and extra breading with a paper towel.
Then coat your baking pan with the other tablespoon of oil and grease it all over so that way it doesn't stick...
Then its all about the layers: (though you can always play around with that to your liking)
~ sauce at the bottom
~ breaded veal
~ light coating of sauce on said veal + mozzarella cheese
~ more meat on the top
~ coat with sauce and cheese, then your parsley
Then bake at 325 F with the polenta, bake for 20 - 25 minutes and you're all set for dinner (and probably have enough time to grab a bottle of wine and call it a day :P)!
