I has a question!
I'm also making a horse but I was worried about the jaw. I want it to be a moving jaw, but I was wondering about how that might turn out since horses have such long faces but such "small" mouths. Is there anything I should know?
I'm not overly familiar with moving jaws, but I think I have to fur (Mendels super seal) the head with the jaw propped open in order to make the fur loose enough, but I'm concerned this might make everything wrinkled when the jaw is closed. I've seen a lot of horse masks where they have these insane Glasgow smiles and I want to avoid that too :3

Lots of possibilities! You could go with the wrinkled look but just arrange the fur so that it folds up neatly in the crack of the jaw. Or add padding inside the cheek so that it will open but stay puffed out and full looking when closed. You don't need to have a huge smile to make the moving jaw work so you could just cut up a bit further than is normal in a horse. Or go with some stretch fur in that area if you can make it match
