So, last Saturday I was visiting my nephew once again
and we decided to bake a queen pie for our dessert.
Queen pie (Finnish: kuningatarpiirakka, Swedish: drottningpaj)
is a pie made with a filling of bilberries and raspberries. The name of the pie
is likely derived from the fact that a jam of bilberries and raspberries is called
a queen jam in Sweden (drottningsylt) and Finland (kuningatarhillo).
A bilberry-raspberry flavoured ice cream is also sold as queen ice cream
(Finnish: kuningatarjäätelö, Swedish: drottningglass) in Finland by Pingviini.
INGREDIENTS
1 egg
1 dl sugar
1 dl cooking oil
¾ dl oat brans
2 dl wheat flour
1½ tsp vanillin sugar
1½ tsp baking powder
1 dl milk
bilberries
raspberries
butter / margarine*
breadcrumbs*
* ONLY for greasing the pie pan.
INSTRUCTIONS
1. Heat up the oven to 225°C.
2. Grease the pie pan and sprinkle the breadcrumbs on the greased pan.
3. Mix the egg, the sugar and the oil.
4. Mix the dry ingredients in a smaller bowl and then add them in the dough.
5. Add the milk.
6. Mix the dough until it's smooth and pour it onto the pan.
7. Spread the dough with a bowl scraper all through around the pan.
8. Add the bilberries and raspberries on the dough as much as you want.
9. Bake the pie on the middle rack in the oven for just over 15 minutes, until the pie is golden brown.

NOTES
When it comes to the berries used in the pie, you can use both berries
sold as packages in the Fruits and Vegetable section of stores or frozen berries
in the Frozen Food section. At least in Finland, bilberry-raspberry mixes are
sold frozen in some stores, such as S-Markets, and using them is definitely cheaper
then purchasing the bilberries and the raspberries separately.
If using frozen berries of foreign origin, it's advisable to boil them for a couple of minutes before using them.
The pie we made turned out a bit too thin, maybe due to using a pan of the wrong size.
It still was edible and tasty despite that, but it's probably advisable to think about
the size of the pie pan used when making this pie, like using a pan smaller than this one.
