This was a quick recipe I found with https://www.cookinglight.com :3 - took maybe 15 - 20 minutes, tops :P

Ingredients:
1 1/2 pounds peeled and deveined large shrimp (I still had my leftover frozen bag of precooked shrimp which comes that way already :P)
1 tablespoon cornstarch
1/4 cup fresh orange juice (I used Ruby Red Grapefruit w/ Tangerine*)
2 tablespoons low-sodium soy sauce
2 tablespoons honey
1 tablespoon rice wine vinegar (used white vinegar*, didnt notice any difference)
1 tablespoon chile paste with garlic (sambal oelek- I used sriracha)
2 tablespoons canola oil
1 tablespoon minced peeled fresh ginger (used 1 heaping teaspoon of ground ginger, dried)
3 garlic cloves, minced (3 big teaspoons, right from the jar)
1/3 cup chopped green onions (skipped this, just added 1 to 1 1/2 teaspoons dried chives, its more than enough)
rice noodles (which I 'stole' from one of those "pre-make" boxes- you could probably even do this with that packaged udon or ramen, just keep in mind ramen cooks a bit quicker!)
To make:
Place thawed shrimp in a medium bowl. Sprinkle with cornstarch; toss well to coat and set aside.
Get a small bowl and combine juice, soy sauce, honey, vinegar and chile paste, stirring with a whisk (or fork in my case, I ain't proud :P); set aside.
Pour water into a large saucepan per box instructions, and bring to a boil. Toss the noodles in and let them get a bit soft and then when they're good to go (but not mushy) pour that in a colander to drain & cool off. (Cover with a paper towel if you have to, just to keep them from re-drying on you)
Turn down to a medium-high heat and pour in the 2 tablespoons canola oil. Add garlic and ginger to the pan and stir fry for 15 seconds- let that get fragrant! Then toss in the shrimp, cook for three minutes (remember, shrimp cooks QUICK) and then add juice mixture. When it starts to get good and thick, throw the noodles RIGHT BACK in there to cook with the sauce to get even thicker.
Once its all thick and the shrimp are good and pink, serve IMMEDIATELY and top with the chives, giving it a quick stir.
Then just chow down :P
