
So I made these cookies today... they are sooo amazing. They are a kind of no-bake cookie, that my mom has warped, for once in a good way. She's a heath nut/nutrition maniac, not to mention just plain crazy, but anyway these are my version of her recipe, with out coconut and all the other weirdo stuff my mum put in.
Ingredients:
Brown sugar (2 cups), cocoa/baking cocoa (1/4 cup, or if your me, you like yer chocolate, so 1/2 cup), Milk (1/2 cup), Butter (1/2 cup, or simply 1 stick), salt (one teaspoon), peanut butter (1/2 or 1 cup depending on preference, and I'm sure if you have allergies to peanut butter you can replace it with the usual substitutes), and quick oats (3 cups worth, but if it doesn't seem thick enough don't be afraid to add an extra half cup.
T h e n i n e s p i c e s:
Paprika, Ground Cinnamon, Chili Powder, White Pepper, Ground Nutmeg, Ground Ginger, Cayanne Pepper, Ground Allspice, and Ground Turmeric root.
All of these spices are to add to the flavor, the turmeric is supposed to be good for somethin', and isn't really required, due to its faint flavor, so to replace it just add an extra dose of Cinnamon, or which ever of the spices strikes your fancy. The amount added to your pot should be just a couple shakes, or a couple teaspoons.
This concoction takes constant attention once you start it, until you get them all formed out on wax paper.
FIRST LAY OUT YOUR WAX PAPER, YOU WILL WANT IT READY.
You need a decent sized pot, non Teflon preferably, big enough for a half gallon to easily fill and still have room.
Drop in your stick of butter, and from there add all of your DRY ingredients (spice, sugar ect.) DO NOT ADD THE OATS, stir them together, and partially break up the butter. Did I mention you'll be wanting to use a pretty tough spoon for this? I use a big steel one that doesn't bend or wobble, trust me, its more convenient. Anyway, After this, FIRE UP THE STOVE! Your WET ingredients are next. You will want to add them quickly after you start the burner or whatever, to prevent anything from burning. After you add these, stir constantly, until your results are smooth and kind of a pudding texture.
When you've got it there go ahead and add your oats, and stir it though until its well mixed with the pudding-like stuffs.
Your gonna want a regular spoon for this next part, like what you'd use to eat your cereal.
Take and scoop up whatever you think would make a good sized cookie for you, and drop em on the wax paper like I've shown up in the picture, smooth em out with your finger tips, around the top and edges after you get em all down, and then its safe to leave 'em alone till they cool. My family isn't afraid to pick em up while they are still floppy and whatnot, so if you feel like tryin' one out the spice is at its best when they are still warm. other than that they will stick together if you don't let them sit for awhile, you can just leave them where they are or put them in the fridge. Time depends on how big you make the cookies, and we never waited anyway, so your guess is as good as mine.
In the end, they are the perfection of sweet and spicy.
